Turkey or Pork Breakfast Sausage

My husband likes sausage for breakfast, but it's hard to find pre-made breakfast sausage that isn't full of questionable additives, fillers, and/or nitrates. This breakfast sausage recipe is really easy to make and contains none of those iffy ingredients. I make up 1 or 2 pounds at a time and keep them in the fridge for up to about a week. If you want to make up even more at a time, you can freeze the patties in an airtight container separated by layers of parchment paper.

Turkey or Pork Breakfast Sausage

1 lb ground turkey or pork
1 tsp onion powder or 1 T onion flakes
1/4 tsp each cumin, black pepper, nutmeg, oregano, red pepper flakes, and ground ginger
1-1/2 tsp poultry seasoning (or 1/2 tsp each dried basil, thyme, and sage)
1-1/2 tsp sea salt
1 egg, lightly beaten

Mix all ingredients together and chill for at least an hour to let the flavors meld. Form it into patties and saute until nicely browned on both sides. If you use turkey you might need to grease the pan a little, but if you use pork it should produce enough of its own fat.

This sausage looks incredibly good! When you can make it this good with those few ingredients, don't you always wonder how manufacturers can mess it up so much? I do. I feel the same with all the foods that don't need gluten, but it's added. :-(

My wife and I are big fan of breakfast pork sausage (and now of scottish eggs too!). We had originall y found a good all natural one but the store stopped carrying it. WE then lucked upon a very very natural and healthy one from our local butcher which was quite a lucky find. Fortunately now thanks to this recipe from you, we will never have to go sausageless again!

Thanks for a great recipe! I made them yesterday using half turkey and half pork. Also cut salt in half as I don't eat very much of it. Mine were not quite as pretty as those in your pic but they sure tasted good. Nice to have an easy thing to grab when you are on the go. I will be making this a lot!

Great Recipe! I made it with ground turkey and it was delicious - so thrilled to add this to my regular breakfast. I backed off the salt by 1/3 but I think next time I'll use half or less. Probably just my paleo tastebuds ;-) thanks! And keep up the posts please.

Using this recipe, I seasoned up a couple of pounds of ground turkey last night. This morning, I made THE most amazing turkey sausage! I had cut the salt in half just because I seem to have a taste sensitivity to salt and wanted to try a lower amount first. YUM. I recently found out that I am allergic to pork, so this is a great substitution.
