I made these Carrot Cake Caveman Cookies from SoG's blog today:
Go check out the recipe! I think these are more like muffin tops than cookies. No matter what you call them they're pretty yummy.
My tweaks:
I used regular carrots instead of baby carrots
I used 1T pumpkin pie spice instead of nutmeg
I added 1/4 tsp stevia extract

I was going to bake some neanderthin cookies, but these look pretty tempting.
One word of caution about stevia: it has been used for birth control. I personally don't use it.
I definitely made some of these yesterday but I used half a cup of walnuts and half a cup of pecans instead of one of the cups of almonds. Yummmy.
do you think these can be made w/ something other than nuts? I'm allergic.
Brett - Are you allergic to seeds too? I think these would probably work well with sunflower seeds or pumpkin seeds or a combination.
